Food-grade refined glycerin is used in what places 

Food-grade refined glycerin is a sweetener and moisturizing agent commonly used in food processing to give food smoothness, taste, and good sense.

1. Application in bread, cakes, etc. 

Food-grade glycerin is used in bread, cakes, etc., as a moisturizer, and strong hygroscopicity, to maintain a soft texture and extend shelf life. 

2. Application in fruit juice, vinegar, and other beverages 

Tannin is the source of bitter and astringent taste in fruits. Glycerin can quickly decompose the bitter and astringent taste in fruit juice and vinegar, enhance its thick taste and aroma, brighten its appearance, and make it sweet and sour. 

3. Application in wine, white wine, grape wine, and other alcoholic beverages 

As a taste improver, sweetener, and bitter flavor remover applied in alcoholic drinks, adding a proper amount can increase wine’s aroma, mellow sweetness, and thickness. 

4. Application in the fruit jerky and fruit cake industry

 Fruit jerky is prone to dehydration and dryness due to storage problems. Fruits also contain tannin. Food-grade glycerin can improve the taste of fruit jerky, enhance its aroma and quality, increase its sweetness and shine, and effectively extend its shelf life. The same applies to fruit cakes. 

Specific usage methods: 

1. Mix food-grade glycerin with other raw materials when processing dried fruits, and use 1kg of this product per 100kg of product. 

2. In fruit cakes, add food-grade glycerin to the cooked fruit cakes, calculate 0.8-1kg per 100kg, mix evenly, calm, and shape, then package and market. After adding the above two products with food-grade glycerin, it can play a better role in palatability, color, moisture retention, and antioxidant.

5. Application in meat jerky, sausage, and cured meat industry

Meat jerky belongs to medium moisture content food. To achieve the goal of lasting conservation, traditional methods often involve drying the product for a long time to control its moisture content at around 16% (water activity Aw <0.7). However, this can result in dry and hard tissue, poor tenderness, and a grayish-white color. Adding glycerin as a moisturizer can maintain the condition of low water activity, and improve the moisture content, thus improving the tenderness. Adding 3% food-grade glycerin can reduce the water activity to below 0.7, control the moisture content at 20%, make the tissue soft, and improve the tenderness. When processing, dilute the food-grade glycerin with pure grain wine above 50 degrees, spray it evenly on the meat or cut meat, and knead or stir it thoroughly. It can lock water, moisturize, achieve a weight gain effect, extend shelf life, and improve product taste, color, and aroma. 

6. Application in pet food: Dried chicken breast as a pet leisure food is popular in Europe and America.

China produces and exports the most dried chicken breast products, nearly 100 million tons annually. European and American countries have stringent requirements for pet food. The physical and chemical indicators must meet the corresponding standards, and the appearance requirements are very high. The appearance requirements of dried chicken breast products are red and smooth, with no fat, blood stasis, white silk, and dry cracking. Adding food-grade glycerin as a moisturizer can prevent dry cracking and improve product appearance. Adding about 2% food-grade glycerin to the dried chicken breast can get the ideal product appearance of dried chicken breast products. 

7. Other food industry applications Used as a solvent, hygroscopic agent, and color carrier.

In seasoning and coloring food, glycerin is helpful for food shaping due to its viscosity. We can use glycerin as a heat transfer medium directly in contact with food in the rapid freezing of food. Glycerin is also a lubricant for food processing and packaging machinery. Glycerin is used as a moisturizer in tobacco (mainly cigars) to maintain the moisture of smoking, prevent crispness, and increase the sweetness of tobacco.
